Tender coconut Sweet Relish Drink - Paayaasam

Summer Sun is bright and strong in every summer and already we are drinking lots of butter milk, tender coconut and fruit juices.  Very often we tend to drink some refreshing and relishing drink which is "soft" to stomach :) Already we quench ourselves with lassi , butter milk , melon drink and so on. But this time my mom surprised me with this easiest & quickest yet very healthy drink on the right time. It’s so easy to make and a lovely way to chill out in this heat .
Tender coconut Sweet Relish Drink -  Paayaasam 
Ingredients :
Tender coconut - 2 big sized
Condensed milk - 1/4th a tin
Pistachios & cashews (Optional) - 1 tablespoon sliced & fried in ghee
Cardamons (Optional ) - 2 or 3 pcs 
Method : 
  • Cut open the tender coconut and collect water in a container 

  • Scrap the tender coconut into the same container itself

  • Add condensed milk to this water

  •  Add the fried nuts and cardamons.
  • Serve chill after refrigerating for an hour.

How to preserve corriander leaves

I have been suffering a lot to store my coriander leaves and one day my surfing helped me a lot to get an idea that a Green house effect for this herb helps to preserve. So i tried out these techniques and amazingly it worked out :) I was able to store them without wilting or spoiling for more than a couple of weeks.
So i thought i can share with you all.
Once bought from store and back home from your shopping , snip off the roots of the coriander .



Fill a jar half way with water and place the cut ends of the herb in it 

You can leave this as such in room temperature if you are planning to consume the herb within a couple of days . But if you need to store for many days then , prefer covering the fresh leaves with a plastic bag loosely and store it fridge.

You can change the water every 2 days once or after you notice the colour change in water.

Home Made paneer like the branded ones

Hi everybody,
Happy to meet you in this New year 2014...Quite a long time i was busy in other schedules which kept me postponing my writings here.
And this time i would like to share homemade cottage cheese as like the branded ones :)

Ingredients Required :

Milk - 3 lit
Sour curd - 3 tspn

Method :
  • Boil milk in a heavy pan. When it reaches its boiling point , simmer the stove .
  • Add the curd to the milk 
  • Now you can see the milk solids get coagulated and whey water being formed
  • Now switch off the stove and filter them using a muslin cloth 
  • Squeeze them to remove excess water
  • Let them cool for 20 min 
  • Now grind them in a mixie . This makes the cottage cheese / paneer soft
  • Remove from mixie and then knead the paneer to soft textured dough  and press store it in a square container.
 
  • Refrigerate for 20 min before use 

  • Cut to desired shapes and use
  • Its always good to consume paneer on same day or in couple of days
